Served at as the warm up wine (an excellent choice, I might add) at a recent tasting held at Portland's beloved Le Pigeon, Berêche has long been one of my favorite bubblies. This particular bottle, a powerful and slightly yeast-driven Brut Réserve offered up a riotous nose of French baguette, granulated honey, white peach, and white flowers. I love the pent-up energy in this wine—autolytic notes and mineral acidity orbit layers of orchard fruit and stone fruit, until at last they engulf and dominate the close. Bérêche et Fils Champagne Campania Remensis Extra Brut Rosé

Confession: I have a soft spot for Bérêche. I've tasted the Campania Remensis Rosé NV on more than one occasion, though this is the Extra Brut, with notably more focus and mineral verve than the regular Brut. What it shares, however, is joyous complexity, and a hue that is the exact color of ripe nectarines. The mousse is very fine, with creamy texture upfront and lush layers of apricot, red berries, rhubarb, candied orange peel, and allspice—all of this dissolves into chalky minerality at the close. Marc Chauvet Champagne Special Club 2005

The Marc Chauvet Special Club 2005 is a provocative blend of 70% Chardonnay and 30% Pinot Noir from family-owned estate vineyards in Reims. Pale lemon yellow, the attack is decidedly creamy, but this aspect quickly dissolves through a layer lees-infused wet dough notes accompanied by lemon pith and white grapefruit rind. Perhaps what is most surprising is the mineral-verve that follows, intense wet shell and saline notes makes for a brisk, albeit very prolonged finish. Bérêche et Fils has become a favorite grower Champagne of mine, thanks to a generous friend who always seems to have it on hand, the 2005 Brut Milléime Vieilles Sélectionnées is no exception. I'm always impressed by the depth and complexity Bérêche possesses—the nose is quite lush with brioche notes, orchard fruits, dried pineapple, candied orange peel and honey.
